I recall some dudes on here mentioning some kind of inflation attack in the PSX game Darkstalkers 3. I think it had something to do with the vampire guy Jedah? Was that his name? Sorry I haven't played the game in ten years ^^;

Thanks a bunch. The more I watched that, the more I remembered how all the characters used such weird attacks, it was like Street Fighter but with Capcom's development team on hallucinogens.

There is, but from what I've seen, it isn't nearly as impressive. She barely swells at all, at least in the few videos I was able to find. :(

I know the scene you're talking about. It's one of Jedah's more unusual attacks (although where Darkstalkers is concerned, everything tends to be a bit weird), and involves him grabbing his opponent's face and pumping them full of blood until they explode.
The exact visual effect for the attack varies depending on who the victim is, with the most impressive example being Lilith, who's breasts swell up like balloons, expanding to immense size, before finally popping.

He uses the attack twice in this video. The first time is at around 0:56, and again at 1:51.
I've heard that other characters experience butt or belly inflation when subjected to the attack, but I've never been able to find video footage of this, so I can't be sure.
