Cooked rice will not expand. It already expanded by asorbing water when it was cooked. You could eat uncooked, dry rice, but that seems a bit extreme and rather unpleasant for a minimal effect.
I have no idea, but it seems to me that you'd have to eat a lot of food in order for any such expansion to be noticeable.
