I'm pretty sure it was in one of the first three episodes of season 2, but I don't remember enough to narrow it down for you. Maybe I'll search for it next time I have a computer, I'm on mobile at the moment. It was a pretty good one; if I liked men, I'd have saved it somehow.

Yeah, you'd think someone called Princess BUBBLEGUM would have an inflation scene by now. But they keep using them on Finn and Jake. But yeah, I'm pretty certain that lots of good inflation moments do exist from CN, they're just lost. Out there, somewhere...
That's me being optimistic though. For example, I've heard of that show I.M Weasel hving some sort of mouth to mouth inflation involving an attractice female nurse as I.M Weasel is giving her CPR. I have no idea if that's a rumor of not though.

It's not a rumor. I've seen it. Is in a short that happens on an ice place, like North Pole.
The character that gives CPR to the nurse is I R Baboon. It's kind of a gag of how brute he is.
The size she gets is pretty big, but it happens too fast. Worth a look anyway in my opinion.

As a huge fan a regular viewer of Adventure Time, I can confirm that there is no Princess Bubblegum inflation, ever. However, Jake likes to change his size here and there if you're into that. No specific moment comes to mind though.
I feel like we would have jumped on that pretty quickly, so I'd wager the answer is no.
Then again, Bolin (a male character from Legend of Korra on Nickelodeon) had a suit inflation near the beginning of the season and no one seemed to care, so what do I know?
There's likely plenty of fan content around if you look for it.
